You've tried iced tea, but have you tried icewine tea? It's a black tea blend flavoured with icewine, a sweet dessert wine made from grapes that have frozen on the vine. The result is a fruity, honeyed cup that's lovely hot or iced.
What is icewine?
Icewine is a rich, sweet dessert wine. The grapes are left on the vine into winter and picked only once they've frozen naturally. In Ontario, Canada, the rules say the temperature must be -8°C or colder when they're picked.
Because the water in the grapes is frozen, pressing them releases only a few drops of concentrated juice, full of sugar and acidity. That's what gives icewine its intense sweetness, balanced by a fresh tang. It takes a lot of grapes to make a small amount, which is why icewine is so expensive.
Where does icewine come from?
Icewine began in Germany, where it's called Eiswein, and it has been made there since at least the early 1800s. Today Canada, and Ontario in particular, is one of the world's best-known icewine producers, and the region holds festivals to celebrate each new season.
What does icewine tea taste like?
Icewine tea brings together the malty depth of black tea and the sweet, fruity character of icewine. Expect notes of ripe pear, berries, honey and caramel, with a gentle tartness. Depending on the blend and how long you brew it, it can be mellow and delicate or rich and bold.
How to brew icewine tea
- Tea: 1 teaspoon per cup.
- Water: freshly boiled, just off the boil.
- Time: 3 to 5 minutes. Brew for less time for a lighter cup.
- Milk: it's good with or without.
To make it iced: brew it double strength, let it cool, then pour it over plenty of ice. It's a great summer drink.
