Souter Bros. Coffee: Speciality Coffee from East London

Brothers Daniel and Stuey Souter of Souter Bros. sharing a laugh over a cup of coffee

Souter Bros. is an independent speciality coffee roaster in East London, run by brothers Daniel and Stuey Souter. They started out in 2020 with a mobile coffee truck and a micro roaster, wanting to bring farm-level quality home to London, freshly roasted and without cutting corners. Their rule is simple: if they wouldn't drink it, they won't sell it.

Roasted to order in East London

Souter Bros. is a small-batch roastery that roasts to order, so there's no stock sitting on a shelf. Every bag goes out within 48 hours of roasting. As well as online orders, they roast for wholesale customers and events.

They also run a full-time café at North Middlesex University Hospital, serving their coffee to NHS staff, patients and visitors. Blue Light workers get 10% off all in-store products with the Souter Bros. loyalty card.

How they roast

The brothers roast on a Giesen, and their aim is to bring out the character of each origin, not hide it. For most of their single origins that means medium to lighter roasts, which let the terroir come through without tipping into bitterness. Their Brazil Santos is roasted darker to bring out its natural sweetness.

Coffee from people they know

Souter Bros. buys from producers and co-operatives the brothers know personally or have visited, including in the Mogiana region of Brazil, Huila in Colombia and the Tambopata Valley in Peru. They plan to build more relationships across the coffee belt, to bring more unique speciality coffee to the UK.

Award-winning Nicaragua

The coffee they're most proud of is their Nicaragua from San Juan del Río Coco, which won 2 stars at the Great Taste Awards 2026. Smallholder families grow it under native shade trees at up to 1,800 metres, and it's sun-dried on raised beds. In the cup you get cocoa with hints of vanilla and citrus, and a creamy body. Their Peru from the Tambopata Valley won a star at the same awards.
