Bailies Coffee Roasters is an independent speciality coffee roaster in Belfast, Northern Ireland. Russell Bailie started the business more than twenty years ago, and it has grown into one of Northern Ireland's best-known roasters.
How it started
Bailies started small, with Russell selling coffee from the back of a van. From there, the business was built on travelling to where coffee is grown and building long-term relationships with the farmers who grow it.
Working with farmers
Bailies partners with coffee farming communities who are committed to quality, and aims to build ethical, sustainable, long-term relationships with them. They see a responsibility to their farming partners that runs right through how they source, roast and brew.
Award-winning roasting
Bailies has its own coffee lab, where the team develops a roast profile for each coffee to bring out the best in it. Their roasters have done well in competitions too: Stephen Houston won the Irish Brewers Cup in 2017 and went on to compete at the World Brewers Cup that year.
They also run training for cafés and businesses, from barista skills to helping them get the best from their coffee.
