

San Ignacio Peru
This month’s featured roaster, Moonroast, brings us a truly special coffee from the highlands of northern Peru. After a recent visit to Chirinos with his son Tom, Fran from Moonroast returned inspired by the farmers, the land, and the exceptional quality of this year’s harvest.
Sourced from small producers across Chirinos—a celebrated district in San Ignacio Province—this lot showcases the region’s rich heritage and ideal growing conditions at elevations above 1,700m.
Grown with care and tradition, many farmers continue to cultivate heirloom Arabica varietals including Caturra, Typica, Castillo, and Bourbon. Each cherry is handpicked, fermented for 24–36 hours, and slowly dried on lined patios, resulting in a clean, balanced, and deeply flavorful cup.
