Terrone & Co is a speciality coffee roaster in Tottenham, north London, run by Italians who set out to break with Italian coffee tradition. Instead of the dark, bitter roasts many of us know from Italy, they roast carefully sourced speciality coffees to bring out their natural sweetness and fruit.
An Italian who didn't like Italian coffee
Founder Edy Piro grew up in Salerno, surrounded by coffee, but never really enjoyed the strong, dark-roasted espresso he grew up with. That changed on a trip to the United States, where he tasted lighter-roasted, high-quality coffee for the first time. One cup, an Ethiopian Yirgacheffe bursting with blueberry, changed his idea of what coffee could be.
Back in London, he started Terrone & Co to bring that kind of coffee to Italian coffee culture, beginning with a stall at Netil Market in east London.
How they roast
Today Terrone roasts every batch at its roastery in Tottenham on a Giesen W15, a 15kg roaster, combining modern roasting with the rituals of the Italian coffee bar. They only buy coffees they can trace back to the farm, and they like to know their producers well. As the team puts it, they want to know them "down to the names of their dogs".
Brazil, Colombia and Ethiopia are among Edy's favourite origins, and the team brews everything from AeroPress and V60 at home to espresso at the roastery, where lunchtime latte art contests are taken seriously.
