North Star Coffee Roasters is an independent speciality coffee roaster in Leeds. Holly and Alex Kragiopoulos (known to everyone as Krag) founded it in 2013, and it has grown into a roastery, four coffee shops and a coffee academy.
How it started
Before North Star, Holly and Krag worked in coffee-growing countries, including a research trip to Kenya. Seeing the people behind coffee, and how fragile the supply chain can be, shaped everything that came after. Krag set up the roastery in Leeds in 2013, and they've been roasting in the city ever since. Today the roastery is in Armley, west of the centre.
People and planet first
North Star describes itself as a roastery "focused on impact, prioritising people & planet before profit", and it is a certified B Corp. They work with speciality-focused producers and care about how coffee is grown and how the people who grow it are treated.
The team
Krag is the head roaster, and profiles each coffee to show off the best of the bean. Holly is the coffee specialist, sourcing coffees and running quality control.

North Star has four coffee shops in Leeds: at Leeds Dock, on Sovereign Street, in the Victoria Quarter and on Great George Street. Its North Star Academy runs coffee courses for home brewers and hospitality professionals.
